Das ist wichtig, die Temperaturen w\u00e4hrend der Ernte h\u00e4ufig noch \u00fcber 30\u00b0C sind. Warme Trauben w\u00fcrden w\u00e4hrend der Selektion und Verarbeitung bereits unerw\u00fcnschte G\u00e4rungen und sonstige mikrobielle Prozesse starten.
